Truly Scrumptious

Today as always is Muffin Monday.

I made two different kinds today b/c what I had planned wasn't going to be everyone's cup of tea and I like to be accommodating.

SO, I made some Betty Crocker (just add water) blueberry mini muffins and was a bit disheartened that something so simple turned out so lovely and delicious because I was about to embark on a relatively elaborate muffin that potentially wouldn't be as tasty as the packet of dry stuff I added water to...

ANYWAY then I set off on making these:

Inside Out Carrot Cake Muffins

This one was the prettiest

The recipe was sent to me by my friend Taryn and I've been waiting for about 2 1/2 weeks now to make them. Next week I'm going to try to find and tackle my sister-in-law Ashley's request of Banana Nutella Muffins.

Anyway, if you care to hear my review of these tasty treats here goes:

They're awesome.

When you bite into it the gooey sweet cream cheese is a wonderful surprise. Not SO sweet like icing on the cake but just the right balance to go with the tasty carrot cake surrounding it.

I was quite hesitant b/c they say to fill the muffin cup up so high and I know how terrible that can turn out BUT I trusted the website b/c it shows the progress and her's turned out okay. I was amazed at how high up they baked, very cool.

I have never made anything with a filling like this so I was a bit scared of what was going to happen. Luckily disaster didn't strike and I was able to get good results and make some notes. Less is more when putting the batter on the bottom. On some of mine I didn't have enough room to put a sufficient amount of batter on the top so after they had baked up so lovely you could kinda get a peak at the cream cheese gooey deliciousness inside.

Still wonderful, even the ugly ones.

I hope the boys hate them so Lincoln brings some home with him :)
